Few things in life
are as comforting
as a bowl of soup.
Recently I have learned
that this elixir
does NOT only come
in cans,
and restaurants!
Hard for me to believe at first,
but wonderful Barley Soup
can actually be produced
at HOME
in LESS than a day!
Much to my surprise,
there are no secret ingredients,
Just 5 Simple Things:
Oil (I like canola)
1 Onion
2 or 3 cloves of Garlic
Water
Barley.
Salt to taste.
Add simple spices you enjoy.
Recipe`
In a large pot:
saute` the garlic and onion
in two tablespoons of oil
for 4- 5 minutes
until translucent & softening.
Add 9 cups of water,
then 3/4 cup (or more!) of (rinsed) barley.
Slow simmer for
30 minutes,
or longer.
Tip: you may thicken soup
by adding a tiny sprinkle of flour.

My fav soup would probably be split pea. I make it at home from scratch - it takes a couple of hours but is worth the time.
Oh pretty kitty! Pretty photos, lovely quotes and a delicious sounding soup recipe. Love those soup recipes, a lovely addition to my ever growing list of them. I made a big batch of beef and vegetable soup last night. Love making them when it's cold outside. I'll be posting it when I can take a photo. Have a great weekend Cloudia.
Soup is definitely a comfort...I like to have a freezer full at all times...vegetable barley is one.

I do love barley in soup but I've never made barley soup, no meat with it. I'll definitely try it! Right now we have a large pot of turkey soup in the fridge. With lots of vegetables and broth, and a couple jalapenos thrown in to give it zing. Mmm, I love homemade soup!
This Minnesota girl knows all about soups, as nothing is quite so comforting on those supremely cold days as soup!

That information thing is amazing, but you gotta wonder if much to any of it is really useful.
I like to use my crock pot. My favorite is to cut up a pork roast in large chunks, apply McCormick Perfect Pinch Cajun spice to the meat, then mix a packet of slow cooker savory stew mix and a packet of pork gravy in 2 cups of water and pour it over the meat inside the slow cooker. Often, I add baby carrots, too. Let it stay in on "low" for ten hours. Soooo good.
I agree about Barley soup, it can be better than good old chicken soup for making you all better! One comforting food that came right to mind (more dessert-like) is roasting the perfect not too burnt, marshmallow with all sides completely golden and the inside mushy and warm heated on a good old tree branch, around a hot fire with your loved ones.... and maybe a ghost story or two! Now that is comfort!...of course a hot chocolate will add to it...on a chilly night...
Now this blog is not only the pleasure for the eyes and meat for soul, but also a cook-book)). What's next??
